Klaus Schurmann, professional sausage maker and co-owner of Old Country Sausage Shop near Raymond, Alberta, insists on pure excellence! Only superior products are allowed to carry the Award Winning Old Country name.
In February 2001 and again in 2005, Schurmann was recognized for excellence in sausage making by the Alberta Meat Processors Association and the Alberta Food Processors Association. Several of his unique products were awarded Certificates of Excellence at the Alberta Meat and Sausage Competition held by the Alberta Meat Processors.
Schurmann's decades of experience have contributed to the development of an excellent line of sausage products. He began learning his craft in Germany and has continued to refine his expertise in Canada. While he uses many European recipes, Schurmann also enjoys the challenge of creating new recipes to suit the North American palate.
Schurmann does not add MSG, binders, fillers or extenders to any of his sausage. “There are too many people with food allergies or sensitivities. They want to be able to eat sausage that has no sugar, flour, or wheat crumbs. They want and need a pure product,” he explains.
The Calgary Farmer's Market has given Schurmann a wonderful venue to create an even greater variety of sausage. Curry Lamb, Merguez, Mango Fiesta, Festival Apple, and Turkey with Sun-dried Tomato have all been created in response to his new market.
